GRAPE VARIETY: Sauvignon Blanc
VINE PLOT: 9.5 hectares.
TERROIR: The vines are planted on Kimmeridgian limestone marls. The soil (village of Saint Laurent lAbbaye) is stony on the surface and MLayey deeper down.
WORK IN THE VINEYARD: The vines are cultivated according to the principles of sustainable agriculture.
VINIFICATION: 100% destemming (for greater softness and finesse). Low pressure direct pressing (pneumatic press) in order to extract the highest quality juice. Following cold static settling, fermentation takes place at low temperatures in temperature controlled stainless steel tanks.
