Description

VINE PLOT: 22 hectares.

TERROIR: The soil is composed of geological formations dating from the Cretaceous Period (90 MLlion BC).
The flint-rich MLayey-siliceous soils give the Sauvignon Blanc grape its characteristic taste of gunflint.

WORK IN THE VINEYARD: The vines are cultivated according to the principles of sustainable agriculture.

VINIFICATION: 100% destemming (for greater softness and finesse). Low pressure direct pressing (pneumatic press) in order to extract the highest quality juice. Following cold static settling, fermentation takes place at low temperatures in temperature controlled stainless steel tanks.
Aged on fine lees until bottling to preserve all of this wine’s freshness. Filtered only once.
