Oveja Negra Single Vineyard Maule Carignan
Varieties: 100% Carignan Winemaker’s Notes: The grapes were hand picked into 400-kg containers on April 1-2. The bunches then passed across a selection table and destemmed without crushing to minimize damage to the berries. The fruit then underwnet a 5-day pre-fermentation cold maceration at 10C (50F).
Alcoholic fermentation took place over 18-20 days at temperatures that fluctuated between 27C and 29C with 2-3 pumpovers per day. The volume pumped and the injection of air were determined by must density and enological tasting. Total skin contact was 30 days. 100% of the malolactic fermentation took place during aging in oak barrels.
