Fourchaume is the largest vineyard in Chablis Premier Cru: 115 hectares on the right bank of the Serein River, near the Grands crus area. Most of our Fourchaume (1.27 hectares) was planted by André Tremblay, Joëlle, the father of Bouchard. Low profit. Harvesting by hand. Fermentation in stainless steel tank and aging 100% in French oak barrels (old barrels of 350 liters) on lees for a minimum period of 12 months. Minimum Bottling 15 months after harvest. Harmonization : this wine is capable of aging over 8 years (even in the best vintages). This is a gourmet wine. Perfect with noble fish, poultry in creamy sauce and soft cheeses.
